  • About the Opportunity

  • Key Responsibilities – Second Butcher Cruise Ship Duties & Onboard Galley Operations
  • Assist the Chief Butcher in preparing, trimming, portioning, and storing meats, poultry, and seafood to menu and production specifications for all dining venues.
  • Follow standard recipes, portion controls, and presentation guidelines while accurately labeling and storing products to ensure freshness and food safety.
  • Operate and maintain butchery equipment safely and effectively, including meat slicers, saws, knives, grinders, and vacuum packers, in compliance with USPH, HACCP, and company sanitation procedures.
  • Maintain impeccable cleanliness and organization of the butcher shop and related storage areas through regular cleaning, proper waste disposal, and adherence to hygiene standards.
  • Monitor product inventory, assist in daily stock rotation, and report low or expired items for restocking to support continuous galley operations and minimize waste.
  • Work collaboratively with the galley team, supporting special menu requests, dietary requirements, and event functions as needed.
  • Demonstrate and promote a respectful, inclusive, and safety-focused work environment, actively supporting junior team members in their development.
  • Requirements – Cruise Ship Second Butcher Role & Meat Preparation Experience
  • Minimum 1 year of hands-on experience as a butcher, meat cutter, or in a similar role, preferably in high-volume kitchens, hotels, or cruise ships.
  • Formal training or relevant certification in butchery, culinary arts, or food production is preferred; equivalent practical experience is welcomed.
  • Strong knowledge of various meats, poultry, seafood, and portioning techniques, as well as understanding of food safety regulations and industry hygiene practices.
  • Ability to maintain focus, accuracy, and efficiency when working under pressure in a fast-paced, multicultural galley environment.
  • Proficient English communication skills required; additional languages are a valued asset.

  • Set up the butcher shop and production areas with required tools, protective gear, and ingredients prior to each shift.
  • Assist with receiving, inspecting, and storing all meats, poultry, and seafood deliveries according to established procedures to ensure quality and traceability.
  • Support portioning and preparation for buffets, à la carte service, crew mess, and special operations as required by the menu plan.
  • Conduct routine cleaning and sanitizing of all tools, machines, and work surfaces in compliance with maritime and company standards.
  • Participate in regular deep cleaning processes, temperature checks, and inventory audits within the butchery department.
